The new food truck, Totally Baked Cookie, serves freshly baked cookies and ice cream until 4 a.m. Thursdays through Sundays.

There’s a new food truck looking to cure those late-night munchies.

Totally Baked Cookie debuts on Thursday, April 20, during Bud’s Glass Joint’s 420 Flame of Thrones party at Lost Leaf bar and gallery off Roosevelt Row in downtown Phoenix. And the first 100 customers will get free cookies. Owned by Arizona State University law student Averie Brookes, the food truck will serve freshly baked cookies and ice cream until 4 a.m. four days a week.

Brookes, 23, is a second-year law student at ASU. She started Totally Baked Cookie as a delivery-only service last July, baking out of a shared commercial kitchen space in Phoenix and delivering on Uber Eats, Postmates, Yelp, Grub Hub and the company’s own delivery system.

“I was initially going to call it half-baked, but why be half-baked when you can be totally baked? I always wanted to be a business owner and have the biggest sweet tooth and love baking, so I put the two together and here we are,” Brookes said.

As the business became more popular, she started to receive orders across the Valley, so she decided to buy a truck and offer her mobile munchies more easily. The truck will operate from 7 p.m. to 4 a.m. Thursdays through Sundays with a schedule to come on the website. It also will be at special events during the day, such as food truck meet-ups.

Menu filled with pot references

Totally Baked features eight types of cookies for $1.80 each:

  • OG Chocolate Chip.
  • M&M Yum Yum.
  • Peanut Butter Express.
  • Confetti Wap.
  • Brownie Fudge Haze.
  • White Chocolate Widow.
  • Gluten-free and vegan chocolate chip.
  • Oatmeal Resin.

Customers can get cookies in larger quantities, called “Hot Boxes,” and there’s an option for an 8-inch cookie cake with a custom icing message. Also, ice cream is sold for $4.20 a pint in four flavors: chocolate, vanilla bean, double strawberry and mint chocolate chip.

Brookes plans to expand mobile service to Flagstaff and Tucson next year, and eventually have a brick-and-mortar location.
